Picnic in the living room with blueberry bundt cake

Hard to believe but weather in Spain can be moody too....just yesterday we spend the day at the beach and today a big rain shower surprised us in the late afternoon. Pablo was not very excited about this sudden turn of change. After I pick him up from the kindergarten, we usually will spend some time outside, today however we just rushed home, avoiding to get wet and dirty. To ease his sadness a little I decided to make a picnic...picnic in our living room. Some baking ingredients were gathered, the pirate tent has been assembled and filled with cushions, teapot was filled with hot water and aromatic tea....there was nothing else left to get the party started...

I remember as a kid I loved to do something like this a lot. I was building thousand of caves, hiding from the rest of the world, imagining great adventures, reading books, having picnics. These days the whole setup is much easier, you just need to have a tent, which are available in different kind of versions (pirate, Indian, castle etc.) and are build up in couple of minutes. I do agree that the creativity is getting lost these days too....but if you want to make it quick and the kid is still to little to know how to build a cave, the approach with a tent might come handy..

Blueberry bundt cake
  • 2 eggs
  • 90 g sugar
  • 1 lemon
  • 3-4 tablespoons Greek yogurt
  • 90 g butter melted
  • 180 g flour
  • 1,5 teaspoon baking powder
  • 125 g fresh blueberries
Preheat the oven to 180C and grease your bundt cake form. In a bowl whisk together eggs and sugar, till light in colour and double in size. Add zest of the lemon, juice of half a lemon, yogurt and melted butter, mix well. Sift together flour and baking powder, add it to the egg-sugar mixture, mix till everything is well combined.  Finally add the blueberries, stir careful avoid to break the berries. Poar the batter into the bakung form and bake 35-40 minutes, till golden brown (make the stick test).
Let it cool a little before taking it out of the form. Decorate with sugar glaze and berries (for the glaze mix some powdered sugar and rest of the lemon juice)

Enjoy!

P.S. Pablo loved it a lot.....

  1. It looks yummy as always, the cake looks very moist and tasty, not surprised Pablo loved it and on top under a tent, how great that is!
I guess I need to do that with my nephews when they will be back in Barcelona probably in the summer :)
