The light is what we miss the most in winter, ever since we moved to Sweden. Winter season here is very charming, but not with much daylight and in one point of time you start longing for spring and more sun.</span><br />

Now, spring is here and you find yourself busy with all the preparations for the new season... house, garden, terrace. The days start getting longer, the temperatures are rising and your mood is changing. All of sudden you wanna leave the house and do something outside. You plan your first picnic, meet friends for biking or walking tour and take your first afternoon coffee outside at the terrace. Some of us manage to make their first barbecue of the year, enjoying the fact that warmer season is upon us.</div>

Our first picnics were done some weeks ago too, I was not losing much time and dragged my boys out as soon as the sun came out and the temperature reached two digits. The bikes are out from the garage and the first biking tours were done. Garden and terrace prepared for usage, first veggies and plants are planted. The only thing left was to prepare something special for the Easter break. </div>

Easter in our family is celebrated rather small and humble and the days off are mostly used just for the three of us. I would prepare some easy Easter treats, we would use nice spring weather for picnics and plan a short family get away. Special breakfasts and brunch with friends will be prepared and a lot of coloured eggs will be eaten. On Easter Sunday the kids will go out in the garden and look everywhere for Easter treats, which were hidden by the Easter bunny the night before. It is not any different this year, this time we will be expecting the Easter bunny to come over to Fehmarn (German Island) with some special Easter treats and till then will be enjoying the time off from work and school, spoiling ourselves with some Easter specialities.</div>

This Easter Bunny biscuits are very famous in Germany and were always my favourite treat when I was younger. Now I do them home for my son and my husband and they do love them as much as I did or still do. They are super easy done and taste delicious, despite the fact that the ingredients are rather humble. They go perfect for breakfast, brunch or afternoon tea and are best to be eaten still warm in my opinion.</div>

<li style="text-align: justify;">200 g quark (low fat)</li>
<li style="text-align: justify;">70 ml neutral oil</li>
<li style="text-align: justify;">100 sugar</li>
<li style="text-align: justify;">vanilla essence or sugar</li>
<li style="text-align: justify;">1 egg</li>
<li style="text-align: justify;">pinch of salt</li>
<li style="text-align: justify;">1 teaspoon baking soda</li>
<li style="text-align: justify;">300-350 g flour</li>
<li style="text-align: justify;">some melted butter</li>
<li style="text-align: justify;">sugar</li>
</ul>

Preheat the oven to 180C. In a bowl mix together quark, oil, sugar, vanilla and egg together, till all well combined. Sift in baking soda, flour and salt, mix till all ingredients are combined. You shall get soft, velvety and sticky dough. Flour your hands and your working place with plenty of flour, put out the dough and press it out with your fingers. Sprinkle some more flour on top and roll it gently out, not too thin... Flour cookie cutter and cut out the bunnies, eggs or any shape you like. Transfer the buscuits on the baking sheet, brush them with some egg yolk wash and bake for 15-20 minutes, till edges start to get golden. Take the buscits out brush them with some melted butter and sprinkle with some sugar, to get this famous sugar crust.</div>

Summer this year is very much summerly if I can say that, even here in Sweden and who would think that. I heard all the horror stories about rainy summers in Sweden before we moved here, one week of sun and then is over people would say, telling us if we really wanna exchange Spain for Sweden. Now, this is our first official summer in Sweden (I kind of do not count the last one as we were pretty much busy with the move) and I do not know what people were talking about. I mean if I should complain about Swedish summer it would be rather about all the hot days we have had since weeks already. I have got my lovely summer teint from countless beach visits, opening the beach season already in May.</div>

With all the hot days we are having right now, our daily eating behaviours did change... well ice cream seems to be on the top of the list, followed by lots of veggies and fruits. Its rather light and more balanced, as we cannot really eat heavy food right now. I do believe you feel the same, as this summer seems to be very hot everywhere. I do enjoy the sun though, I must say that... but when the evenings come and I feel this light and fresh breeze outside, I do run out in the garden for a little cool down before the sleep. I close my eyes and listen to the wind playing with the trees, feeling the cool breeze on my skin... being grateful for this special gift from summer.</div>

Hummus is one of my favourite foods. Serve it with some fresh veggies sticks and you will get a great summer starter for your dinner. Its not only very tasty, but also very healthy and fresh, perfect for hot summer days. You wont get heavy on your stomach, but still you will get all the vitamins you need. Hummus comes in different tastes and varieties, there are also many different recipes out there. My are rather humble and super quick to make, you just need a food processor and your delicious summer starter will be ready in no time. Put it in a jar, to make it look even more inviting and your guests will be delighted. I choose baby carrots and sugar snaps to my two kinds of hummus, but you can also serve bell pepper, cucumber or cauliflower to it, depends what you like or having home at that moment.</div>

Gazpacho is an ultimate summer soup if you ask me, I mean it comes from Spain, they know exactly what to eat during the hot season. The soup is done from vegetables and is served cold. Serving them in champagne glasses as I did, might not be the typical way to serve this soup, but certainly the funnier one. If you serve canapes or tapas along with the soup too, there is no need to have it served in a big portions... this is where fancy champagne glasses are coming very handy. Gazpacho is very refreshing and also very easy on your stomach. My version of Gazpacho might not be the traditional one either as I left some of the ingredients out, to make it even more lighter and more refreshing. It goes quick, again you just need a food processor and fancy champagne glasses to serve the soup. </div>

Slowly pour in some of the vegetable stock to get a soup like consistency. Add some olive oil and season with salt and pepper. Put the soup into the refrigerator for at least 1 hour before serving.</div>

Frittata my reliable helper when it comes to quick made food... does not matter if its for dinner, lunch or brunch. There is no real recipe as such there, yes I mean there is, but it always different because it really really really depends on what my refrigerator has to offer... sometimes I will do it with tomatoes and ham, sometimes with tomato and bell pepper, sometimes with spinach and tomatoes, sometimes with tomatoes and halloumi cheese, like I did this time.... Some nice cheese cannot be missed here either, I know its not particularly light food, but it always goes well and frankly there is no need to eat a lot of it either. Figs marmalade, fresh berries, some crackers and nuts will complete your cheese board to perfection.</div>

When it comes to canapes or tapas, there is no need to go super advance at all. Toast some baguette slices with olive oil put a teaspoon of creme fresh on top, then top it with some caviar and dill and you have a perfect canape within couple of minutes. Melon with jamon is another perfect addition to your summer dinner table... serve it cold for additional cool down for your guests.</div>

When we were living in Spain there was always something to do on the weekends, I mean special activities outside... the weather would always play along and the fact that we were living next to one of the most exciting cities in Europe helped a lot too. The moment we decided to move to Swedish country side, I got my doubts whether this will be the same there too. I did not know what to expect and got bit worried we might get bored. I could not be more wrong here, I know it now. Country life suits us all very well and every weekend is as excited and special as they were in Spain. I do admit the activities are slightly different, but still as exciting and funny.</div>

Now, there is another small but very significant fact, which makes us feel super happy here, and that would be our neighbours. We have got the best neighbours ever if you ask me, who welcomed us so dearly in the neighbourhood and do help us with different matters. It did not take long and we became friends, as well as our kids and dogs. We take every opportunity to spend time together and that can be anything... starting from a dog walking afternoons, over Christmas decoration crafting sessions to picnic in a forest in the middle of Swedish winter. There is always fun and lot of sharing, while kids are playing together the adults are having some grown up talks and there will be always delicious food. It was about time to have our neighbours over in our home for a special treat too, hence I decided to host a small brunch party for them on the weekend.<br />

For me brunch is always the answer, when you expect more people to come. Many brunch dishes can be prepared in advance, so you do not stress up on the main day. You can vary between many easy to make dishes. It remains special but still casual, perfect for a country side weekend meet up in my point of view.<br />

There are some must have dishes, which will always appear in my brunch menu... these are quiche, fritatta, salad and muffins. Olives, cheese, some nuts and cherry tomatoes come always handy. Buy the best you can get and your guests will be more than delighted. To make it even more special you can also bake some bread, but this is really optional and only when you have some time to spare, otherwise pay a visit to your favourite bakery for some fresh baguette bread, instead. When it comes to the sweet treats, my personal rule is always to have something humble, such as coffee cake or bundtcake, something chocolaty and small cake with cream, to make sure everybody will get what they like most. This weekend my choices were Russian raspberry cream cake, Swedish punsch rolls and German coffeecake... </div>

Preheat the oven to 180 C. Line your baking form with baking paper. Beat the eggs and sugar till they will double in size and get a pale colour. Sift in flour and hazelnut flour, fold it carefully with a spatula till all well combined. Pour the batter into the baking dish and bake for about 20-25 minutes (make the wooden stick test). Let the cake cool of completely and cut it in two layers.</div>

In a bowl whisk together the whipping cream, vanilla essence and powdered sugar, till stiff peaks starts to form. Put the cream in a piping bag with a big star pipping tip.</div>

Put the first cake layer on the cake plate and spread 2-3 tablespoons of raspberry on it. Pipe some of the cream on top and spread 2/3 of the raspberries on it. Put the second layer on top and cover it with jam too. Decorate the top with the remaining cream and berries.</div>

Preheat the oven. In a bowl whisk together eggs and milk, season with salt, pepper, some chili flakes and smoked paprika, add some of the spring onions. Cut the cherry tomatoes in half and put them cut down into the pan (use a pan which you can put into the oven in a later step). Pour some olive oil over the tomatoes and let them cook for a minute in the pan. Pour the eggs over the tomatoes and spread the grated cheese on top. Put the pan into the oven for about 10-15 minutes till golden brown. Take it out of the oven, sprinkle with some more spring onions and serve.</div>

Crush the cookies and crumble the cake. Mix them together. Add some cream cheese (spoon wise) and mix it in, continue to add the cream cheese till you will get a smooth and sticky batter, which can be formed in a roll. The batter shall not be too dry or too wet, just about right to be work with. Form some roles and put them into the fridge for at least 30 min. Roll out the marzipan and cover the batter rolls with it. Put them back into the fridge. Melted the chocolate. Would you ask me some years ago how I feel about having a dog, the answer would be most likely rather negative. Not that I had something against them, I just could not picture me and a dog under the same roof. It all changed recently, with Bella our newest family member the cutest Jack Russel puppy ever. Today's post is dedicated to Bella, which you probably already guessed.<br />

It all started with our decision to move to the Swedish country side, having a dog came as a natural fact, everybody has a dog living in a house on the country side, right? So once arrived here the idea grew on us and some weeks ago we finally got our Bella. It was love at first glance, not sure it always works like this but we saw her, she saw us and we kind of all knew it.<br />
Now, even though we are speaking one week and a couple of days, since this cheeky lady moved in, it feels like she was always a solid member of our family and there is no way I can picture my future without her any longer. I heard from others that this can go quick, but I am still pretty much stunted how quick it actually was. So now having her with us I have another family member, which likes to get spoiled once in a while (or maybe a little bit more). I know I shall be all firm with her diet, timing, portion etc. but did you ever tried not to give anything to your doggy while you were having a snack and she was sitting next to you giving you this look (you know which one I mean)?!? Well I tell you it is a hardest things to do, to say no to them that very moment.<br />
Being all firm (and I am really giving my best) I still feel like she does deserve some snacks between the meals. I was not all crazy about the doggy treats you can buy, as most of the ingredients are "Chinese" to me.... some even bit scary, not being an expert on doggy food here. So I started to look around what dogs can eat. There are many recipes out there, I checked couple of them looking for healthy and light version. I found plenty, but finally ended up with an adjusted version of healthy doogy cookies, which were done yesterday for Bella, next to an apple cake treat for us.<br />

I was a bit nervous at first... all for nothing as she loves these cookies so much. Now when she give me this look (please look at the pictures) and I am unable to say no to a treat, she gets one of these cookies and I feel much better, knowing exactly what she is eating. The recipe could not be easier and the ingredients are actually always around.<br />

<span style="font-family: "courier new" , "courier" , monospace;"><b><i><u>Doggy treat cookies</u></i></b></span><br />

<li>200 g oatmeal flakes</li>
<li>1 ripe banana</li>
<li>1 egg</li>
<li>2 small carrots</li>
<li>1 teaspoon oil - I used coconut oil</li>
<li>0,5 teaspoon turmeric (optional)</li>

Preheat the oven to 180C. Blitz the oatmeal flakes in a food processor, till you will get a flour texture, set it aside. In a bowl smash the banana, add the egg, finely grated carrots, oil and turmeric, stir till all well combined. Add the flour, mix again. Let the dough sit for 15 minutes. Take a small piece of dough and roll it to a ball, place it on the baking sheet lined with baking paper, take a forge and flatten the dough ball with it. Alternatively you can form small bones out of it. Bake for 30-35 minutes. Let them cool completely before giving it to your dog or putting them into a glass jar</div>

As for us, it was something rather unplanned as I was not planning to bake anything, but my son, to whom by the way I also cannot say no that easily, wished for a cake. He was a bit sad and cold and I could not resist. Apple cake is always an option when something comfy should be done. Every time I feel bit down and need this special treatment apple cake will come up first in my mind. Not sure why but it always works his magic on me... actually on my husband, on my son and many of my friends too. I guess there has to be something to it then... maybe the cinnamon which warms us from inside, the sweetness of the apple which reminds us on sunny and warm days or this little dollop of vanilla cream or ice cream on a warm cake, running down the side. Either way it works to chear up my lovelies and this is all what matters.<br />

<li>60 g brown sugar</li>
<li>80 g butter cold cut in cubes</li>
<li>1 teaspoon baking powder</li>
<li>pinch of salt</li>
<li>1 egg</li>
<li>2-3 apples</li>
<li>1 tablespoons brown sugar</li>
<li>agave syrup</li>
<li>cinnamon</li>
<li>4-5 small cubes of butter</li>
</ul>
Preheat the oven to 180C. Put flour, sugar, butter cubes, baking powder and salt in the food processor and give it couple of spins. Add egg and pulse another couple of times till dough starts to form. Should the dough be too dry, add some cold water (spoon wise) to reach a firm ball of dough (not too sticky). Take the dough out, half it in two and roll out two circles, big enough to cover your baking dish. Butter you baking dish and cover it with the first dough circle, covering the edges too. </div>

Skin, remove the seeds and cut the apples in cubes, add them in a bowl. Add sugar, cinnamon, some agave syrup and mix till all apples are covered. Put the apples in the baking dish. Now add the butter cubes on top. Take the second dough circle and cover the pie. Press the dough edges with your finger to seal the pie. Springer some brown sugar on top, cut a small cross in the middle and bake for about 45-50 minutes. Serve the case with some cream or ice cream on top.<br />

We all are looking forward for the weekend to come, thinking ahead what can be done... when it comes to us it always has to include some kind of activities outside. Living in Sweden now, does not change anything on that fact, we just need to get the right clothes (and by that I mean warm clothes) and off we go. This weekend was no exception either.<br />
On Saturday we woke up just to discover that the sun decided not to make an appearance, so to cheer us up I spontaneously decided to make breakfast in bed. Breakfast in bed is always something super special and is actually quite easy to make. There are various versions but my will always include scrambled eggs and something in a bowl... yogurt with berries, smoothie with fruits and cereals or porridge with berries, honey and nuts. This weekend it was oatmeal-quinoa porridge with fresh blueberries and dried mulberries. Scrambled eggs and crispbread. Easy, delicious and super comfy.<br />
Suddenly there was no issue to go outside and do some activities at the fresh (bit frosty) air... All packed and properly dressed we made our way to the beach. Beach in winter time can be very exciting too... I do admit it is a bit colder as in Spain, but it works and we still manage to do our small picnics. Next to the picnic I always manage to shoot hundreds of pictures, because I discover yet another fascinating big rock, which caught my or Bella's attention. Bella is our newest family member, a Jack Russel puppy who joined our house about a week ago. This little cheeky lady is very curious and obviously as crazy about being outside as us. Despite the fact that is has been only a week when we got her, it feels like she always been with us, she blends in perfect in our little and crazy family and I got an additional photo model on top.<br />

They are heavenly chocolaty, deep and dark in taste, exactly what your soul needs, when winter shows herself not from her best side. They are easy to make and with some frosting and berries on top, they transform to a very delicious winter chocolate dessert.<br />

<li>100 g dark chocolate</li>
<li>100 g soft butter</li>
<li>120 g sugar</li>
<li>3 tablespoons cocoa powder</li>
<li>vanilla extract</li>
<li>pinch of salt</li>
<li>3 large eggs</li>
<li>50 g almond flour (ground almonds) - optional!</li>
</ul>

Preheat the oven to 180C. Grease or line your muffin form with muffin paper. Put chocolate and butter into a sauce pan and melt it on a low heat. Take it from heat and whisk in sugar, cocoa powder, vanilla extract and salt. Add the eggs, one at the time, whisking them in. You shall get a smooth, shiny and runny chocolate mixture. At this point you can add the almond flour, but the cakes can be easily done without it. I like to add the almonds for additional flavor and texture. Pour the batter into the muffin forms and bake for about 12-15 minutes. The edges will be firm, while the centre still bit moist, this is when the cakes should be taken out of the oven. Let it cool for at least 15 minutes on the cooling rack before taking them out of the baking form. Sprinkle some powdered sugar and serve.</div>

For the frosting I used 3 table spoons of cream cheese, 2 table spoons of powdered sugar and some vanilla extract. You can garnish them with some fresh berries, they will not only make the appearance exceptional, but also add additional taste and freshness to the mini cakes.</div>

The season changes at the country are more noticeable as in the city and I am still enjoying the vibes of my favorite season, the colors, the warm and soft lights in the morning and in the evenings, as well as the food and this special melancholy feeling when it´s rainy and crazy windy outside and you are siting home with a cup of tea in your hands cuddled in a soft blanket. It´s the right time to put on the fireplace and lit some candles and enjoy the change from bright Summer to cosy Autumn. </div>

With the change of temperature one longs for more soul food, food which gives us some warmth from inside, food which is still not as heavy as we would like it in winter, but it should be more than a salad what we just love in Summer. My dish to welcome Autumn in our house is usually our all favorite pumpkin soup. It´s easy made, taste delicious, can be varied in so many different ways and the color is simply stunning. They say you eat your food with your eyes too and this dish is definitely the ultimate "eyes eating food" for me. Pumpkins are fun in many ways, not only for eating, but for decorating or carving funny or scary faces...</div>

I think I know already now how I will overcome my first long Swedish winter then.... which will surely involve more experimenting with the wood!!!</div>

Peel the pumpkin and sweet potatoes and cut it in cubes. Chop the onion and garlic and cook them for a bit in a big pot with some olive oil. Add the pumpkin and sweet potatoes, let them sweat for couple of minutes, add vegetable stock, ginger, cayenne pepper and turmeric. Put on the lid on your pot, reduce the heat to medium high and let it cook for 20 minutes. Check if the veggies are cooked through and take the pot from the heat. Add the cream and season with salt and pepper is needed. Now puree everything with a blender stick, till you get a smooth creamy soup. Serve the soup with some roasted pumpkin seeds and crispbread.</div>

While I am still having plenty of projects to make our new home cosy and nice, I am using each and every opportunity to get familiar with the area around us. My special target are the local farmers, some of which I know already, but there still some more to be discovered. Last week a new farmer made it to my list, one who does sell veggies and was missing so far. </div>

I was not sure what to expect and what I wanted to buy on the way there, but as soon as I entered the shop and saw this super gorgeous chard (not sure you can call chard gorgeous, but this was exactly what I thought when I saw it) and I knew I won´t leave the shop without it. This gorgeous chard got some more veggies friends which made it to my shopping bag - corn, kale, pumpkin, fresh salad and more. All delighted and super happy about my new discovery I went to the farmer to pay... smiling like a crazy person, really I could not control all my happy feelings at that moment. I wonder what he was thinking of me, a crazy tourist from god knows where, who found chard in different colors!!! He was so kind and humble, exactly the way you would imagine a farmer to be... it´s a whole different shopping experience and I am always having so much fun.</div>

Pablo´s new room is quite big and I had plenty of space to create different "theme areas" in it. He has now his very own library, car-play, creative, sleeping and storage areas. To create more storage space for his toys and clothes, I painted our old "ikea" dresser in grey to fit it to the remaining colors I have chosen for his room, a mix of grey, white, black and natural wood. And to make the dresser shine even more and be something special I painted some pattern on it using different color. I am pleased with the outcome, so is Pablo and my husband. Its kind of cool to re-purpose old furniture and create something really unique and funny. I definitely had a lot of fun and this would not be the last furniture piece I have changed for sure.</div>

Chalk paint is the answer for any furniture upgrades, if you ask me. I am not a painter and did not had much experience at that area either, but I learned that you cannot make something wrong with chalk paint. There is also no need to sand the wood before the painting, which makes the whole changing process faster and easier. </div>

Cook the pasta according to package instructions. Pour cream and milk in a saucepan, add garlic, salt, pepper, nutmeg and bay leaf and let it cook for 10-15 minutes on a low heat. Wash and chop the chard and kale (remove the hard stem from the kale and use only the leaves for cooking) and cook them for 5-7 minutes in a pan with some olive oil, make sure they are not getting burned. Remove the bay leaf from the cream sauce and pour it over the kale and chard and let it cook for additional 10-15 minutes, till the liquid starts to reduce. Add the cooked pasta and give a mix till all pasta will be coated in the cream sauce. Sprinkle some grated parmesan cheese and roasted pine nuts over the pasta and serve.<br />

Even so this dish does not contain any meat, you won´t be missing it. I really do appreciate kale and chard at this time of the year. The mix of parmesan and pine nuts makes this dish quite special too. As for the pasta, well we all love pasta and to make it a bit more healthy I used whole wheat pasta. The earthy taste of it fits perfectly with the earthy taste of kale and chard in my opinion. All in one a perfect dish with many health aspects to it, which will be appreciated by your family.<br />

It has been a long long time since my last post and I am afraid some of you were thinking I was gone for good. Well the reason for this very long pause was our move to Sweden.... yes, yes you read right, we actually moved from Spain to Sweden and the last couple of months were pretty busy with all the millions things you have to do, when you are moving. </div>

I will spare you from all the "nice" stories about the last couple of months and all the "nice" feelings we went through till we finally arrived in Sweden, as it will end up in a super long complaining post, and nobody wants that, right? Certainly there are also some positive sides to the moving too, such as you finally will get a bigger home, you have finally the change to say goodbye to all the unnecessary things you have been collecting over the years once and for all, you can get super creative decorating your new home and you are closer to your family. BUT (which really needs to be written in capitals) you first have to overcome all the stress and emotional moments before you arrive in your new home. And I am not talking about the funny moving company, which changed their previous statement the day our stuff was supposed to be picked up, neither about all the bureaucratic things you have to manage, but about over 10 years living in Spain we were leaving behind us... It is never easy to say goodbye to your friends!!!</div>

We arrived in Sweden well and are still kept busy, which is OK as we are creating our new home and this is most of the times pretty funny. I discovered my interior design skills as well as handmade decoration skills, while my husband discovered his hand-building skills. We actually moved to a country side, which is a change and we are still in the processes to find our way around... mainly including discovering of all the different farmers around, which makes me personally super happy. We also will have a garden in the future... a real garden... so some of my future researches will also include a study on how to plant and grow vegies and fruits.</div>

Now between all the moving and decorating, I hardly came to focus on baking and cooking, so in one point my husband and my son started complaining. Luckily we have a garden with a huge blackberries bush, which were just waiting for us to be picked. And so it was on time for me to lock myself in the kitchen and create something delicious for my boys.... The outcome was a blackberry crumble cake, which made both super happy. Pablo was mainly proud of the fact that he was picking the berries himself and super happy to see them ending up in the cake.<br />

The picture of my post today will be a wild mix of everything, cake, interior decoration, some insights in Pablo´s new room and some of the relaxing moments at the beach.<br />

<li>100 gr butter (melted)</li>
<li>150 gr yogurt</li>

<li>250 gr flour</li>
<li>2 teaspoons baking powder</li>
<li>pinch of salt</li>
<li>fresh blackberries</li>

I managed to make two cakes out of this recipe (using standard sized cake forms). Preheat the oven to 180C. Whisk the eggs with the sugar with a hand whisk, add butter, yogurt and vanilla essence and give it another whisk. Sift in the flour, baking powder and salt, whisk till all ingredients are combined. Grease and line the baking forms with a baking paper, divide the dough between the baking forms. Top it with blackberries, gently pressing them a bit into the dough. I covered the whole surface of the dough with the berries.</div>

<li>30 gr butter (cold and cut in cubes)</li>
<li>60 gr brown sugar</li>
<li>100 g flour</li>
<li>0,5 teaspoon of baking powder</li>
<li>vanilla sugar</li>
</ul>

Put all the ingredients into a bowl and combine them with your fingers till you will get big junks of dough crumble... if your crumbles appears too soft, add some more flour, in case the dough will resemble a sand texture add bit of cold water.<br />
Sprinkle the dough crumbles all over the top and bake the cake for 35-45 minutes, till golden brown. Let it cool off on the cooling rack for 15 minutes before serving. It tastes heavenly warm with some vanilla ice cream or whipped cream. Should you be so lucky and have some leftovers, you will be pleasantly surprised about this case 1-2 days later, as it does improve the taste over the time.<br />

Handmade wooden stool done by me. I was checking pinterest for some ideas and found some handmade wooden projects there, so I decided to do something special for Pablo´s room too. It turned out great and he loves it big time. I had super fun myself and I got hooked up by this idea so much, so I think there will be even more furniture building projects in the future.<br />

Some days you have to have a muffin for breakfast, right? Maybe not the most healthiest way to start the day you will say, but certainly a very special one. It is not often we do have muffins for breakfast in our home, but when we do, we kind of celebrate this fact a little. I always try to add some nutritious ingredients to them, still trying to stay rather on the cake side, as muffin is a small little cake treat after all.<br />

We love blueberry hence most of the time I will end up with blueberry muffins. Vanilla is another ingredient, which will never be missed in my baked treats. I am a vanilla girl, what can I say. And as for the nutritious addition (and for the feeling guilty part) there will be oatmeal flakes and nuts.<br />

It can all vary depending on what I am having home, blueberries can be easily changed by raspberries, cranberries, apples, apricots or red currant. Different kind of nuts will add different flavors, as well as different spices... cinnamon, dash of nutmeg or ground cardamom. There is also a seasonal aspect too... while in winter we do prefer them rather spiced up (cinnamon, cardamom etc.) in summer the main focus will be put on the berries or fruits. The dough always remains the same, which makes this muffin recipe so cool, it will be then just up too you to play around with additional ingredients and create a special muffin just to your taste.</div>

<li>1,5 teaspoons baking powder</li>

<li>180 g flour</li>
<li>125 g blueberries (fresh or frozen)</li>

Preheat the oven to 180C. Line your muffin thin with muffin paper cases (about 9 big ones or 12 small). In a bowl whisk together eggs and sugar (with a hand-whisk, give it couple of swings that all it takes). Add vanilla essence, butter and yogurt, give it another couple of swings (do not worry for the small butter clumps at this point, they all will disappear when you add flour to the dough). Sift in flour, salt and baking powder, whisk till all well combined. Fold in the berries, use a spatula or spoon and try not to break the berries. Fill the muffin paper cases up to 2/3 and set aside. Prepare the crunchy topping.</div>

Put all the ingredients in a bowl and mixed them all with you hands till you will get the crumbles, some might be bigger then others. Sprinkle the crumble mixture over the muffin dough (generously) and press it gently with your fingers, so they do stick to the dough. Bake for 25-30 minutes till golden brown.</div>

This post is long long overdue, but I just now got some time to publish it. Today we are going to talk about "Baklava-Cheesecake". I guess most of you have heard about this cake already, I always wanted to try it, but always missed the right occasion to make it. Several weeks ago however I got even two of such special occasions. First cake was done for my family who visited us for some days. Second was made for a good friend birthday lunch invitation.</div>

If you love baklava and cheesecake as I do, then this cake is a must. It looks stunning, special and festive.... perfect cake to be made for a special occasion. <li style="text-align: justify;">90 g sugar</li>
<li style="text-align: justify;">vanilla essence</li>
<li style="text-align: justify;">3 eggs</li>
<li style="text-align: justify;">2 packages vanilla pudding powder</li>

In a bowl whisk (hand whisk) together cream cheese, yogurt, sugar and vanilla essence, till you get a smooth and silky mixture. Add the eggs, one at the time, whisk till all well combined. Finally sift it vanilla pudding powder and fold it carefully in, avoiding too much beating. Set aside.</div>

<li style="text-align: justify;">250 g nuts (I made a mix of pistachios and pecan nuts)</li>

Chop the nuts roughly (I did not chop it too small, to have some bigger nuts bites). In a bowl mix together nuts and syrup. Set aside.</div>

<i><b>Assembling the cake</b></i></div>

<li style="text-align: justify;">4-5 filo dough sheets</li>
<li style="text-align: justify;">3-4 tablespoons of melted butter</li>

Preheat the oven to 180 C. Take your baking form and grease it slightly with melted butter. Take the first filo dough sheet and brush it with butter, fold it in half and cover one part of the baking dish with it. Continue with remaining dough sheets the same way till whole baking form is covered. Depending on how big your baking form is you will need 4 or 5 of the dough sheets. Do not worry to be too neat, just make sure the form is all covered.</div>

Pour in the cheesecake mixture. Take a generous amount of the baklava filling using a spoon, form a small ball and let is fall on top of the cheesecake mixture, letting it sink in. Spread some more of the baklava filling on top. Bake for ca. 40 minutes. Take it out of the oven and let the cake rest and cool of for at least 30 minutes. Serve the cake with a splash of the remaining sugar syrup on top.</div>

I never know when french madeleines are supposed to be eaten... for breakfast, for afternoon tea or for dessert. But what I know for sure is, that those small little heavenly tasting cute looking sponge cakes are one of the favorites in our house. I love the original recipe, done with orange blossom water, but do experiment with different flavors and ingredients to add some variety. There are many reasons to fall in love with madeleines, mines are the delicate taste and cute shell-like form. They can be served to tea or coffee and been eaten, if you ask me, at any time of the day. They are perfect to wow your guests or bring along to a dinner party invitation. </div>

Today orange blossom madeleines recipe, half of which were dipped in chocolate, as I was not sure if we would like to have them for the afternoon tea or for breakfast. Finally we ended up to have them throughout the day, according to my son it was a perfect way to start and end the day. My mom and I enjoyed them with a big cup of green tea after a long walk through the woods and my husband had them with some coffee for dessert. </div>

I think they are relatively easy to make, you only need to invest in a madeleine baking form, some orange blossom water and some time to let the batter chill in the refrigerator. Actually you can do the batter a day before and let it over night... I never manage to do so, as we cannot wait to have them as soon as possible. In a bowl beat together sugar, eggs and honey, till double in size. Sift in flour, baking powder and salt, mix till all well combined. Pour in the butter and incorporate it with a spatula. Add orange blossom water and orange zest and give it another whisk. Let the batter chill for some hours in the refrigerator. Preheat the oven to 180C and grease the madeleine baking form. Pour in the batter (3/4 full) and bake for about 10-12 minutes. Take the form out and let it cool for couple of minutes on the cooling rack, before taking the madeleines out.</div>

Melt the chocolate, dip one end of the madeleine into it and sprinkle with some chopped pistachios.</div>

Spain is spoiling us with most beautiful weather for Easter holidays. It is so good to have some days off from work, doing nothing but spoiling ourselves with some nice treats for Easter, spending lots of time outside at the sun, sleeping in and having brunch instead of breakfast. </div>

We are going bit more casual for Easter this year... with some family favorites and plenty of boiled colored eggs. I tired a new technique to color the eggs (well at least new to me) leaving aside all the stuff you can buy in the shops to make the eggs look spectacular. Instead I used some food coloring and the result was as spectacular... The only things you would need is a plastic bag, handful of rice and liquid food coloring. Boil the eggs, put the rice into the bag, add some drops of food coloring and the egg. Then shake, shake and shake again... The longer you shake the more colorful your egg will turn out.</div>

One of our family favorites is my lemon poppy seeds cake, to me a perfect cake for Easter holidays. It is fresh, delicate and special, very spring like. I usually do this cake in a bundt cake form and having it decorated with some colorful sugar sprinkles makes it a perfect fit for Easter brunch or picnic.<br />

<span style="font-family: "courier new" , "courier" , monospace;"><b><i><u>Lemon poppy-seeds cake</u></i></b></span><br />
<ul>
<li>3 eggs</li>
<li>180 g sugar</li>
<li>120 g melted butter</li>
<li>1 lemon, zest and juice</li>
<li>180 g flour</li>
<li>1 teaspoon baking powder</li>
<li>pinch of salt</li>
<li>2-3 tablespoons poppy seeds</li>
</ul>

Preheat the oven to 180C and grease the bundt cake form. Whisk the eggs and the sugar. Add the butter, lemon zest and half of the lemon juice, give it another whisk. Sift in flour, baking powder and salt, mix till all well combined. Fold in the poppy seeds. Pour the batter into the baking form and bake for about 35-45 minutes. Make the wooden stick test.</div>

Birthdays are cool, but some might be a little bit scary.... My 40th made me a bit fuzzy for the last couple of month. I was not sure if I shall looking forward to it or be rather scared. Finally it turned out to be a wonderful birthday, not scary at all...</div>

My husband took the three of us to Lisbon and we spend a wonderful long weekend enjoying ourselves in this beautiful city. It was the first time for us visiting Lisbon and we just loved it. The food was amazing, people very friendly and open and the old charm of the buildings has something special to it. Lisbon is bit different from what we have seen so far, some people would call Lisbon "old town" and I think I understand why, but to me it was one of the charming thing about it... the old tram, which is still driving through the city and all these magnificent tiles covered buildings. </div>

What really is very noticeable in Lisbon or probably in whole Portugal is that people love food, good food, which obviously made our small foodie family very happy. </div>

My husband planned the birthday dinner <a href="http://www.bairrodoavillez.pt/" target="_blank">Bairro do Avillez</a>, one of the restaurants from <a href="https://en.wikipedia.org/wiki/Jos%C3%A9_Avillez" target="_blank">Jose Avillez</a>, who is a famous Portuguese chef, with several restaurants in Lisbon and two Michelin stars. I am not able to describe in words the experience we had... the exceptional food was just one part of the whole "wow" effect. The ambiente, the service, the open kitchen where at least 13 chefs were doing their magic and then the bar tender... I never saw someone putting so much passion to create a cocktail. Every small details was covered and it was such a joy to see someone loving to do what he was doing. The cocktails by the way, were to die for. </div>

I try to keep them special, delicious and healthy. Today I am going to share an easy recipe for blueberry muffins, which are perfect for a healthy and well-balanced breakfast. They are not difficult to make and do not require any extraordinary ingredients. </div>

<li>120 ml oatmeal milk (or any kind of milk you like)</li>

Preheat the oven to 180C and grease the muffin tins. In a bowl mash the banana, add egg and honey, whisk everything together. Add baking powder, cinnamon and yogurt, give it a whisk. Mix in the oatmeal flakes and milk. Fill the muffin tins half full with batter, put some blueberries, pour more batter to cover the berries, top the muffins with more berries and nuts. Bake for about 30 minutes till golden brown. Take the muffin tin out of the oven and let is cool down for 10-15 minutes, then take the muffins out. Served the muffin with some freshly squeezed orange juice or cup of tea.</div>

Seems like spring decided to visit us earlier this year, we had wonderful spring weather for the last two days and spend a lot of time outside. Saturday was reserved for a lazy day at the beach, small picnic, good book and lot of family quality time... perfect Saturday if you ask me. Far away from the trouble of the busy city and all the stressed people. Beach is not very busy this time of year and I love it the most. Today was reserved for our "traditional Sunday walk in the woods". There will be also a small picnic, more like a coffee break picnic, after our standard route and activities are done. Pablo would take his bike, my husband the backpack with some goodies in it and I my camera.<br />

I made banana bread for us to take with for the small coffee break. Banana bread cake is perfect for picnics and is surely one of the favorites in our home. This cake is best done with very ripe bananas and since I had some home left from the week, the choice for the cake was easy. I decided to pep it a bit with different flavors. I felt like coconut, hence the version of the banana bread cake today is rather exotic. The combination however was perfect and I earned many compliments on the cake from my husband too. The cake came our very moist, not too sweet, with a light touch of coconut. Fresh, nutritious and bit exotic.</div>

Preheat the oven to 180C. Grease and line a loaf baking pan. Whisk the eggs, sugar and vanilla extract till foamy and almost double in size. Add yogurt and coconut oil, give it another whisk. Sift inn flour, baking powder and salt, mix till all well combined. Mash the bananas, fold them in. Finally add the coconut flakes. Pour the batter into the loaf form and bake for 40-45 minutes, make the wooden stick test. </div>

Sundays are perfect for the afternoon tea ceremony and we do celebrate it in our home from time to time. There will be a cake nothing too fancy at all, as we rather prefer a nice and delicious bundt cake for this special event. I am a huge fan of berries, hence there will be often berries mixed into the cake batter.<br />
Bundt cakes are usually not as sweet (at least not they ones I am doing home) and this is why they are my favorite, they are super easy to make, do not require special ingredients and can be pepped up with different flavors, fruits or berries... so you will never get tiered of them. And let´s be frank, bundt cake always just look spectacular.</div>

I do not know how many bundt cakes I have been making in my life, they are not only my favorite for Sunday afternoon tea, but also a perfect to bring along cake, when visiting friends.<br />

Today a moist butter vanilla flavored bundt cake with fresh blueberries. The cake is also perfect for a sweet breakfast or a brunch invitation. You can store it in a container for a couple of days and it wont lose on the taste. The texture is velvet like and the taste of vanilla and berries unbeatable. It taste light (despite the ingredients) and makes you want to have another bite of the cake, as soon as you took the first bite (kind of dangerous cake if you ask)...<br />

<li>150 g butter (rum temperature)</li>
<li>150 g sugar</li>
<li>3 eggs</li>
<li>120 ml buttermilk</li>
<li>vanilla extract</li>
<li>300 g flour</li>
<li>2 teaspoons baking powder</li>
<li>fresh berries</li>

Preheat the oven to 180C and grease the bundt cake form. In a stand mixer whisk together butter and sugar, add the eggs, buttermilk and vanilla extract, give it another whisk. Sift in the flour and baking powder, mix till all well combined. Add the berries and fold them gently into the batter, make sure you are not breaking the berries... Bake for about 35-40 minutes. Take it out of the oven and let is cool for at least 20 minutes on the cooling rack, before taking the cake out of the form. Sprinkle some powdered sugar over the top.</div>

Last weekend Pablo turned 4... I can´t believe how fast time flies. I still do remember all the panic raising in me, on the way to hospital. All the worries and more panic feelings after the birth, first day home, the first couple of weeks till we all got used to the new life situation. We managed somehow, even so I was not quite sure of that in the beginning. And now this little man turned 4 and sometimes I wish I could stop the time or maybe slow it a bit down... don´t you think kids are growing way to fast too?</div>

Choosing a theme for the birthday party was a bit of a challenge this year, as these days we kind of like everything... starting with "cars" and ending with all the heroes which do exist out there. Dinosaurs are also something very interesting these days. After he got his first Dinosaurs book for Christmas his interest for them grew and grew, so I decided to go for a Dinosaur themed birthday party. Theme parties are easy to make these days, as you will find lots of inspiration and stuff in internet. I decided to make the decoration myself, with some help from Pablo, this way he got involved in the preparation process too, which he actually did like a lot.<br />

<li>1 espresso cup of plain hot coffee</li>

Preheat the oven to 180C, line your baking form with baking paper. In a big bowl mix together flour, baking powder, baking soda, salt and cocoa powder. In a separate bowl whisk the sugar with oil, eggs, buttermilk, vanilla extract and vinegar. Pour the wet ingredients into the dry ingredients and give it a whisk. Don´t over whisk, just make sure all dry ingredients are wet. Add the coffee and incorporate it into the batter. Pour the batter into the baking form and bake for 30-40 minutes (make the wooden stick test). Take the cake out of the oven and let is cool down for 15 minutes, then take it out of the form and let it cool completely.</div>

In a stand mixer, whisk butter with powdered sugar till fluffy and pale in color. Add cream cheese, continue whisking till all well combined. Finally add melted chocolate and give it another whisk.</div>

To create the lava crater, I took some of the cake batter into a small glass bowl with round bottom and baked an additional cake, you can also use a muffin form for this. Don´t worry if you cake won´t come out even on the top, use the small "rising dome" as an additional support to create the lava crater. Cut the cake in 3 layers, cut the mountain cake in 2 layers. Frost the layers with frosting. Place the lava crater on top and frost it too... It does not have to be very neat... Mix red and yellow fondant to create marble look and cut some "lava strings" strips placing them over the mountain. I used a led candle to imitate fire coming out of the lava crater. Finish the cake decoration with some dinosaurs and palm trees.</div>

Take the seeds out of the vanilla bean. Put all the ingredients into the bowl and mix till everything is combined and you will get a soft and silky ball of dough. Put it into the fridge for at east 30 minutes. Preheat the oven to 180C. Take the dough out of the fridge and divide it in 16 equal balls. Press them gently with your hand into the round shape. Now take a small dinosaur and press it into the cookie dough, you can also use the feet prints from a big dinosaur. Bake the cookies for about 10 minutes, till the edges starts to brown.</div>

Pour the batter into the baking form, sprinkle the remaining chocolate chips over the top and bake for about 20 minutes.</div>

Next to all the sweet delicious treats there was homemade pizza slices and sandwiches. Popcorn for a snack in between and chocolate dipped strawberries and kiwis. I pealed the kiwis and cut them in slices, then put it on a lollipop stick and covered it with melted dark chocolate.</div>

Yes, yes bread..... you probably do think right now why, why shall I make bread... well homemade bread is the best if you ask me and does not have to be very difficult to make. After you will try this recipe you will agree to everything I wrote above. Now the recipe is done within couple of minutes, the only thing you would need is a bit of a resting time. After you make the dough, it shall rest for about 8-10 hours, overnight if you would like to have the bread for breakfast or you make the dough early in the morning and have a delicious bread for dinner. </div>

Preheat the oven to 200 C. Put your dutch oven with the lid on into the oven too, making sure it will get very hot. Take the dough out of the fridge, you will find it very bubbly and sticky.... exactly how it supposed to be. Flour your working board (I add some poppy seeds to the flour...to add some more flavor to the bread). Using a spatula, scrap the dough out of the bowl on the floured working board. Take a scraper and fold the dough couple of times from the edges to the middle (since the dough is so sticky the scraper makes it easier to handle the folding part). Take the dough ball and place it on the baking paper, then back into the bowl... while you are waiting the dutch oven to get very hot. </div>

Take the dutch oven out of the oven (use oven gloves), place the dough (with baking paper) into the hot pot and put the lid on. Bake for about 30 minutes. Take the pot out and check on the bread... if the bread appears to pale, take away the lid and put it back into the oven for 5 more minutes. Take the bread out of the dutch oven and let it cool on the cooling rack. Serve it with pure butter or flavored butter...</div>

We are in Sweden and days here seem to be much shorter... well it is winter and completely normal, if you would ask the people around here. We needed a couple of days to get used to it... I am not complaining don´t get me wrong, we simple needed to rethink and adjust our daily "outside routine" to the current location. As already said the days are short, by that I mean the brightness outside. It starts to get dark at 4:00 p.m. already, which means most of the outside task shall be done by that time of the day. However, what you will get in exchange for short days, are the long evenings in front of the chimney with a hot cup of tea (of which I personally can never get enough), some pre-christmas programs on TV (also something I do enjoy a lot) or a nice book to read.</div>

For some people darkness can be too much in one point of time, but I somehow still do enjoy it. I mean the cosy fire in the chimney, candles burning all over the house and the lightsofn the Christmas tree sparkling all over the Christmas decoration. While outside it is dark and cold, you do enjoy a cup of hot tea, hot chocolate or cup of coffee inside... can it get more Christmasy and relaxing?</div>

<li style="text-align: justify;">180 g sugar</li>
<li style="text-align: justify;">180 g butter (melted)</li>
<li style="text-align: justify;">150 ml Baileys Irish cream (I used Vanilla Cinnamon Christmas edition)</li>
<li style="text-align: justify;">2 teaspoons vanilla sugar</li>
<li style="text-align: justify;">200 g flour</li>
<li style="text-align: justify;">1,5 teaspoons baking powder</li>
<li style="text-align: justify;">4-5 tablespoons powdered sugar</li>
<li style="text-align: justify;">2-3 teaspoons Baileys Irish cream</li>
</ul>
<div style="text-align: justify;">
Preheat the oven to 180C. Grease and flour your bundt cake form. In a bowl whisk together eggs, vanilla sugar and sugar, till foam starts to build. Melt the butter and let it cool off a bit, add to the eggs-sugar mixture, give it another whisk. Sift the flour and baking powder, add one part of it to the batter and mix till all dry ingredients are getting wet. Add half of the Baileys Irish cream to the mixture, mix till all well combined. Add another bunch of flour, mix, then add the remaining Baileys Irish cream, finish it with the remaining flour. Pour the batter into the prepared bundt cake form and bake it for 40-45 minutes (make the stick test). Let the cake cool down on a cooling rack in the form for at least 15 minutes. Then take it out from the form.</div>

In a small bowl mix together the powdered sugar and baileys (spoon wise) till you get a think runny sugar frosting. Pour the frosting over the cake and sprinkle with some powdered sugar. Enjoy this velvety like cake with hot cup of coffee with a small splash of Baileys.</div>

Well sure we need to adjust a bit, meaning putting bit more clothes on us and taking flashlights with. You see, country side does not spoil us much with streetlights, hence the flashlights. Too much, you would say? Well for Pablo it seemed like a funny walk adventure... going through the dark, trying to catch some forest monsters with our lights and playing with our shadows... However I need to admit, the walk did not last long, in one point my boys started to complain about the cold and we quickly headed back home to the warmth of the fire. </div>

Sift in the flour and baking powder, mix everything together till all well combined. Divide the batter in 12 muffin cup and top it with 2-3 raspberries. Bake for 20 minutes (make the wooden stick test) and sprinkle with some powdered sugar to serve. </div>

We have been talking about this event since quite some time, three food bloggers meeting up one day and cook together for their friends. As simple as it was we first needed to find a suitable date to make this happen. As usually these days, picking a day was the biggest challenge of all, if you ask me. But we made it and today I am finally going to share some recipes and many many pictures of the "MMMM cooking" event organized by <a href="http://kook-pi.blogspot.com.es/">Kooking</a>, <a href="http://food.gregous.com/">GregousFood</a> and me.<br />

There is this saying existing in probably all the countries in the world saying that "too many cooks in the same kitchen, can only spoil the food" the words may differ, but the meaning is always the same. Now three food bloggers in one kitchen, can this lead to a success? Well it actually did and if you ask me it was even more. Besides of all the delicious food we prepared and such a great and cool company we had, I learned new recipes, tips and tricks from Pili and Gregory. Each of us have a special area we shine and so we could just leverage from each other skills and experience, which made the whole event simple super.<br />

We decided beforehand who is going to do what. Some recipe were done in advance and assembled the day of the event. You will find all the links to the recipes by the end of the post, some of which were already published by us before. Baking is my passion, hence I was responsible for bread and dessert. The cake I have been chosen, was an old fashion cake, which I wanted to try for since some time now.... Hummingbird cake, was once invented somewhere in the 70th, got forgotten for some time and is coming back now again. Fruity and moist cake with delicious frosting, a fine finish to a fine dinning.<br />

<li style="text-align: justify;">1 red onion</li>

<li style="text-align: justify;">olive oil (same amount as lemon juice)</li>
<li style="text-align: justify;">1-2 teaspoons grained Dijon mustard</li>
<li style="text-align: justify;">2-3 tablespoons Greek yogurt</li>
<li style="text-align: justify;">fresh cilantro</li>

Cook the unpeeled potatoes in a salted water (for about 30 minutes). Drain the water and let the potatoes cool off. Blanch the beans for couple of minutes in a boiled salted water. Skin the onion and cut it in half rings, you can put them into a small bowl with cold water to take away the bitterness. Take the beans out of the cooked water, shock them in a cold water and cut in equal pieces. Cut the potatoes in chunks, add the onions and green beans, give it a quick mix. </div>

In a bowl mix together lemon juice, olive oil, yogurt and mustard... season well with salt and pepper. Give the dressing over the potatoes and steer till all potatoes are covered.</div>

To garnish the cake I prepared "pineapple flowers" the day before. Peel the pineapple and cut very thin (to see through) slices... Put the slices on the baking tray (lined with baking paper) and let them dry in the oven at 110 C for 30 minutes on one side. Turn them around and put the tray for additional 30 minutes in the oven. Take the slices careful from the tray and push them gently into the muffin form tray and let them dry ready over night. You will find plenty of recipes and videos how to do pineapple flowers in the internet.</div>

Preheat the oven to 180. Grease and flour three 22 cm (9 inch) baking pans. Cut the pineapple in small cubes (take the hard stalk in the middle of the fruit away), try to catch all the juices. Crash the bananas with a fork, till small chunks do appear. </div>

Combine all dry ingredients in a large bowl. Mix the eggs, oil and vanilla in a separate bowl, till well combined. Pour the wet ingredients into the dry ones and give it a whisk (do not over beat, just make sure all dry ingredients are wet). Add bananas and pineapple (with all the juices), steer. Divide the batter equally between the 3 pans. Bake for 25-30 minutes till golden brown. Take the pans out of the oven and let it cool for 5-10 minutes on the cooling rack, then take the cake layers out of the pan and let it cool completely.</div>

In a stand mixer with padel attachment whisk together butter and powdered sugar, till fluffy and pale in the color. Add cream cheese and vanilla, whisk it for another couple of minutes till you will get a fluffy frosting. Take your first cake layer and put it on a serving plate, give a generous amount of frosting on top and distribute it all over the layer, top it with the second cake layer. Proceed the same with the remaining layers. Cover the cake with the frosting and decorate with the pineapple flowers.</div>

I did it again... and by that I mean a spontaneous buy of yet another kitchen tool. I was meeting my friend for a cup of coffee and a long due to chat yesterday, as we have not been seeing each other for some time now. During our walk through the streets talking about this and that, my eyes caught something really cool in the store window.... <a href="https://www.lekue.com/com">Lékué</a> bagel molds. My boys and I love bagels, especially homemade once. If you ever made bagels yourself, you would know that they are actually not very difficult to make, but there are some steps which might be challenging and with this little beauties you won´t have any issues to make your own homemade bagels ever again.<br />

After saying goodbye to my friend, I decided to reward myself with one little present. I rushed back to the shop and couple of minutes later I was an official owner of these gorgeous bagel molds. Already on the way back home I was thinking what kind of bagels I would make for breakfast next day, surprising my boys with something special.<br />
<br />
The molds do hold what they are promising. I was positively surprised and all the steps I was struggling in the past, when making bagels (shaping the whole which will hold during the baking process to give the bagels their typical shape, putting the bagels into the boiled soda water and fishing them out without breaking the shape etc.) were done much easier with those molds.</div>

Not that we are having issues with this, but I know many people who does and wanted to try some gluten free recipes for some time now. The recipe does not yell for raising time either, which made it even more attractive for me. The bagels were done in no time, well there was some time involved of course, but not as much as usual. The result (even with all my fears and doubts) was just amazing... again my biggest fans and criticizers (my boys) were more than pleased with my "madeinnotime" bagels. The bagels came out light and fluffy and I think we will be making them for sure again.</span></div>

<li style="text-align: justify;">6 g dry yeast</li>
<li style="text-align: justify;">1 tablespoon sugar</li>
<li style="text-align: justify;">0,5 teaspoon salt</li>
<li style="text-align: justify;">175 ml warm water</li>
<li style="text-align: justify;">60 g butter (room temperature)</li>
</ul>

Preheat the oven to 180C. Add flour, yeast and sugar into the bowl of your stand mixer and give it a whisk. Put in salt, water and butter, start kneading on a low speed for half a minute or so. Increase the speed of the stand mixer and knead for more 3 minutes. Take the dough out of the bowl and let it cool for about 10 minutes in the refrigerator.</div>

Meanwhile boil some water in a pot and add some salt and 1 teaspoon of baking powder to it (be careful while sifting in the baking powder).</div>

Take the dough out of the fridge and divide it in 6 equal pieces. Shape a ball, place it on the top of the bagel mold and drag it down to shape the bagel. Take the mold and submerge it in the boiling water, let it boil for 20 seconds. Take the mold out of the pot and place it on a plate covered with paper towel, so the remaining water can drain. Proceed the same way with the remaining dough balls. Brush the bagels with some egg wash (egg mixed with some water) and sprinkle some sesame seeds, lax seeds or poppy seeds over the bagels. Put the molds as they are on the oven rack and bake for about 20 minutes till golden brown.</div>

Serve with anything you like. Please note that the bagels should be eaten the same day, as they will lose on taste and shape over the time.</div>

Fridays are usually comfy food days in our house. Some cozy food (preferably something we can eat just with our fingers), nice movie for entertainment and lot´s of lazy time at the sofa. Now with autumn being here, where evenings are starting to get bit chilli and dark, luring at the sofa is more enjoyable than ever.<br />
<br />
For me cozy food means also not too much effort, as I also would like just to hang out on the sofa, getting relaxed from the busy working week. I also would prepare something, what we can possible have on Saturdays for lunch or picnic to, to free up myself from cooking and spend the whole day with my boys. Today I am sharing an easy peasy pie recipe, with the most gorgeous mushrooms you can have, autumn is here and with this the chanterelle mushrooms. Pies are generally considered as comfy food in our home, I personally love it because it literally takes 10 minutes to have it prepared, then you just pop it into the oven and after 40 minutes or so you will get something super delicious and comforting for dinner. Another reason I love pies is that they always taste better the day after and you could enjoy them cold too, hence pie is my number one dish when it comes to picnics.<br />

Now coming to the sweet part of the evening, cookies... better said chocolate chips cookies. I guess I do to tell you why cookies are considered as comfy food... This small little bites of heaven, you do enjoy with a cup of tea or milk.<br />
<br />
Today on the blog pie and cookie recipe, with some pictures the day after.... of course we had some left overs and nice weather on Saturday,so I could not resist to have a small picnic with my boys in one of the most gorgeous parks in Barcelona.</div>

<li style="text-align: justify;">1 pack puff pastry</li>
<li style="text-align: justify;">hand full chantarelle mushrooms</li>
<li style="text-align: justify;">400 g minced meat</li>
<li style="text-align: justify;">1 small onion</li>
<li style="text-align: justify;">3 eggs</li>
<li style="text-align: justify;">250 - 300 ml double cream ( I always use the one for cooking)</li>
<li style="text-align: justify;">50-70 g cheddar cheese (grated)</li>
<li style="text-align: justify;">salt, pepper, nutmeg, smoked paprika powder, garlic powder</li>
<li style="text-align: justify;">pine nuts</li>
</ul>
<div style="text-align: justify;">
Preheat the oven to 180C. Line your baking dish with the puff pastry (make sure not to tear it to much, as it will shrink during the baking process). Cut the mushrooms in quarters and fry them with some olive oil in the frying pan. Season with salt, pepper and nutmeg. Take the mushrooms out of the pan, put a bit more olive oil and onion cut ins mall cubes, fry it for a minute, then add the minced meat. Season with salt and pepper and fry it till all meat is well cooked. Set it aside and let is cool of.</div>

In a small bowl whisk together the eggs, double cream, salt, pepper, smoked paprika powder (about 1 teaspoon) and garlic powder. Add the grated cheese and combine. Assemble the pie: spread the minced meat on top of the puff pastry, following by the mushrooms. Pour the egg-cream mixture over and sprinkle some of the pine nuts. Put the pie into the oven and bake for 35-40 minutes, till golden brown. You can decorate the pie (as I did) with some left over of the pastry.. simple cut any shape you like and put it on top of the pie before baking.</div>

I love to serve a simple leave salad with honey mustard dressing to this pie. Take a bag of different leaves salad, some cherry tomatoes and cucumber. Pep it up with some fresh figs and roasted pine nuts. The dressing is done with some lemon juice, olive oil, honey, mustard, salt and pepper.</div>

<li style="text-align: justify;">200 g brown sugar</li>
<li style="text-align: justify;">2 eggs</li>
<li style="text-align: justify;">vanilla (it can be bit more then usual)</li>
<li style="text-align: justify;">pinch of salt</li>
<li style="text-align: justify;">300 g flour</li>
<li style="text-align: justify;">1 teaspoon baking powder</li>
<li style="text-align: justify;">200 g chocolate chips</li>
</ul>

Preheat the oven to 180C. In a stand mixer using the pedal attachment, mix together butter and sugar will all well combined and pale in the color (about 3 minutes). Add the eggs and give it another whisk, till all eggs are incorporated. Sift in the flour, salt and baking powder, mix till all ingredients are combined. Add chocolate chips and give it another whisk.</div>
<div style="text-align: justify;">
Line the baking tray with baking paper. Use your ice cream scooper to form the cookies.Place the cookies on the baking tray, leave some space in between (you should be able to have 12 cookies on the tray) and bake them for 12 minutes. Take them out and let them cool on a cooling rag.</div>

Weekends are great and we always make sure to spend as much time as possible outdoors. Now with autumn back into town, we can spend the whole day outside. The heat of the summer is gone and hiding from the sun during the day became unnecessary, instead people flock to the streets enjoying the sun, while having a snack, refreshing drink or an afternoon tea in one of the favorite bars or cafe</div>

Saturday was booked with a zoo visit, something which was quite impossible during the summer months. There is a routine we are having when going to the zoo. We will walk there through the small streets of Barcelona, stopping in one of the hundred cafes or bars either on the way there or back, having something small or big for a bite, enjoying the hustle of the big city, building some memories. Every time we are out in the city, we would discover something new, another charming street, bar or restaurant, another small plaza or amazing building and of course I would stop at every corner to take a picture of our new discovery, while my husband would wonder how many of them I can make....<br />

Sunday was filled with a walk through "<a href="https://en.wikipedia.org/wiki/Serra_de_Collserola">Collserola</a>" park, something we love to do on Sundays. Also here we are having a certain "tradition" we follow, our usual route through the woods with an magnificent view on Sant Cugat, with a little picnic in between, ending the route with a small football match at Pi de´n Xandri tree, before we head back home. Same as in Barcelona I always would discover something new which needs to be photograph and even so we went this route hundreds time already there is always a new bush to be discovered, a new flower which blooms or a different angle to make another picture of Sant Cugat....<br />
My favorite cake for such occasions would be definitely my easy peasy sugar cake, which can be done with different flavors, fruits or berries. The cake is moist fruity and just perfect to be eaten with hands, no need for fancy plates or cutlery. The best part of this cake recipe is of course the preparation and the variety. It takes literally 10 min to prepare the batter and 20-30 to have it baked. Today I am giving you two different flavors I made over the weekend. One for my friend, which I made while we were talking about our plans for weekend... she dropped quickly by to pickup some things she needed as she got visit from her family and I thought it would be a lovely surprise if she could bring a fresh homemade cake with her for them. This one was made with different kind of berries and vanilla. I like this version as it is fresh, fruity and somehow decadent of all the vanilla I put in...who does not like berries and vanilla... for me a perfect combination. <li style="text-align: justify;">1-2 teaspoons vanilla essence</li>
<li style="text-align: justify;">frozen or fresh berries</li>

Preheat the oven to 180C. In a bowl whisk together (hand whisk will work perfectly) eggs, sugar and vanilla. Add butter mix briefly. Sift in flour and baking powder, whisk till all dry ingredients are incorporated, no need to whisk too much, just till everything comes together and you get a smooth, runny and shiny batter. Pour the batter into your baking dish and top it with frozen or fresh berries. Bake for 25-30 minutes (make the wooden stick test). Sprinkle with some powdered sugar and serve...</div>
